17.30 – 19.30 Training not only for brewers – FlavorActive. Moderator: Pawel Leszczynski

In this one and a half hour workshop, we will focus on the most common defects that develop in beer at the production stage. We will try two acetaldehyde patterns and the effects of infections and fermentation problems. There will be a total of 10 different flavors. This training is designed as a calibration for home and craft brewers, so they will be able to quickly identify defects in beer and determine their source. It will focus less on sensory theory. It is recommended that each brewery employee take a similar course at least once a year. We also welcome anyone else interested in improving their existing sensory knowledge of beer. Duration 1.5 hours Flavors: acetaldehyde (attenuation and from oxidation), diacetyl, SO2, H2S, paper, oxidized (mixture), artificial honey, phenolic, isovaleric acid. Moderator: Pawel Leszczynski, organizer of the Warsaw Beer Festival, president of the Free Kraft Association.

Do you want to learn how to expertly taste beer, what elements to pay attention to and how to evaluate them? Think that professional sensory knowledge and beer evaluation is reserved only for beer experts and judges? Do you want to learn tasting techniques, principles of beer analysis, test yourself in an aroma test and work with a beer evaluation sheet? Take a basic course in beer sensory and tasting during the WFDP. Students will learn tasting techniques and professional beer evaluation based on six different beers. Hosted by Krzysztof Lechowski, certified judge and former PSPD president.

14.00 – 14.45 Beer in the Kitchen. Cooking on stage with Rankerov Brewery

The Krechs from Krosnowice, located in Kotlina Kłodzkie, are a cooking family, winners of the Family Food Fight culinary program. For years, they have been fascinated by localism and processing, growing plants, pressing juices, holding workshops and organizing tasting dinners at their home. Their brewery and small restaurant will soon be launched. At the WFDP, the Krechas will show how to use raw materials used in beer production in the kitchen.

Collectible beers, beer gadgets and beer attractions donated by breweries – among other things, these will be auctioned off at the festival’s charity auctions. Proceeds from the auction will go to the account of the Cancer Fighters Foundation, which supports children fighting cancer.

Presentation of awards for the best beer of the 2023 Festival and presentation of the WFDP Awards for contributions to the development of Polish kraft.

10.00 – 12.00 Training for beer judges – FlavorActive. Moderator: Paweł Leszczyński

This is the most advanced training, during which we will learn about 20 substances that quite often appear in New Wave beers. Their tasting will also be an excuse to talk about flavor groups such as esters, phenols, sulfur flavors and the like. The focus will be on the defects, but there will also be aromatic characteristics that are peculiar to specific beer styles.

This training course, which includes a proprietary selection of samples, is designed for beer judges and beer lovers who want to know how to identify the different components of aromas, recognize those that are the result of production errors and learn the best ways to sense them.

Duration – 2 hours
Aromas: Acetaldehyde (attenuation and from oxidation), DMS, diacetyl, phenolic, H2S, ethyl hexanoate, feline, isovaleric acid, caprylic acid, lactic acid, metallic, metional, honey, sunshine, paper, spice, astringent. Hosted by Pawel Leszczynski, organizer of the Warsaw Beer Festival, president of the Free Kraft Association.

12.00 – 12.30 University of Environmental Sciences mini-lecture: Biotransformation of hops and bioaromatization of beer using unconventional microorganisms: novel approaches to create unique flavor profiles. Moderator: Dr. Przemysław Leszczyński

During the presentation, participants will learn the basics of biotransformation and bioaromatization and their impact on fermentation processes and beer flavor profiles. An important element will be the role of unconventional microorganisms capable of transforming chemical compounds contained in hops, thus creating new, rich flavors. Specific examples of the potential use of these microorganisms in brewing will also be presented, illustrating the potential for creating unique products. We will also look into the future of beer production, presenting current trends and potential developments that could affect production technologies and revolutionize the beer market.

12.45 – 13.15 Mini-lectures of the University of Environmental Sciences: Innovative functional additives – new approaches in brewing technology. Moderator: Adam Glowacki

The lecture will discuss new approaches to creating beer with unique health, taste and aroma properties through the use of functional additives. The organoleptic, health and technological benefits that these ingredients can bring to beer will be presented. The lecture will provide specific examples of innovative additives, such as natural plant extracts, probiotics or herbs, which open up new opportunities for brewers to create more differentiated products tailored to the needs of today’s consumers. We will also discuss the impact of these additives on the fermentation processes, stability and storage of beer. Finally, we will examine trends and developments in brewing technology in the context of functional additives, highlighting potential opportunities for further innovation and change in the beer market.

In this presentation we will delve into the world of traditional techniques for using wood in the production of fermented beverages from a modern perspective. We will discuss how wood and barrels influence the aging and maturation processes of beer, giving it unique flavor and aroma characteristics. We will outline the challenges of traditional wood use, such as microbiological control and quality maintenance, and new methods for dealing with these issues. The lecture will also provide practical tips on wood microbiology and barrel maintenance to achieve the desired results. We will also discuss modern approaches to these issues that achieve exceptional product quality.

You are welcome to use the breathalyzer test stand during the Festival, it is a free test and can be done several times, for comparison of changes in alcohol content after consumption of individual portions of beer. You can also get a leaflet with elementary information about the impact of alcohol on the human body.

The tests are carried out by the Wroclaw Center for Assistance to Intoxicated People. It is not only a facility on Sokolnicza Street. They also conduct various informational and educational activities on a daily basis. They are aimed, above all, at increasing the knowledge of consumers of alcoholic beverages about the impact of alcohol on our bodies. With this knowledge, it is possible to avoid many unpleasant events associated with harmful drinking.
One of these forms is the possibility of a free test on a breathalyzer at 14-18 Sokolnicza Street, throughout the day, with anonymity.
